A brief explanation: Skin and pulp are removed, but some or all of the mucilage ("honey") remains on the parchment of the coffee seed resultant in a richly complex cup profile with a touch of honey-like sweetness.


That's right, we have sourced our amazing Nicaraguan coffees from the amazing Gold Mountain Coffee Growers for a second year running.
